Venison Breakfast Casserole

This delicious trail-inspired recipe will warm you up in the morning before you head out on the hunt. And it’s great for a delicious everyday meal at home, too.

Ingredients:

  • 10 eggs, beaten
  • 1 lb. venison breakfast sausage (you can also use wild boar, elk or any other wild game breakfast sausage)
  • 1 24 oz. cottage cheese
  • 2 cups cheddar cheese, freshly grated
  • 1/2 cup butter, melted
  • 1/4 cup all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 can hot green chilis (add fresh jalapeños for an extra kick)

 

Directions:

Spray a 9 x 13 baking dish with a nonstick spray. Brown the sausage. In a large bowl, mix together all your wet ingredients, combining fully. Next, add all your dry ingredients, adding the sausage last. Bake at 400° for 20 to 30 minutes. Serve with your favorite hot sauce.
